  1. Cut the ramson leafs in fine slices, keep some as decoration for later
  2. Chop the onion in small pieces
  3. Grate the lemon zest
  4. Press out the juice from the lemon
  5. Add ramson, onion, ricotta and half of the grated lemon zest and mix it together, season with salt and pepper
  6. Cut a pocket in the seitan steaks
  7. Fill the seitan steaks with the ramson-ricotta mixture
  8. Add the rest of the grated lemon zest over the filled seitan steaks, season with some salt and pepper
  9. Heat up a pan and fry the filled seitan steaks carefully on both sides
  10. When ready remove the filled steaks from the pan
  11. Pour the lemon juice into the pan
  12. Add the rest of the ramson-ricotta filling and the cream
  13. Stir all ingredients to a creamy sauce, season it with salt and pepper, if necessary
  14. Put a ricotta-ramson filled steak on a plate and pour some sauce on top, decorate with a few sliced ramson leaf
