Bread Salad à la Freja
Ingredients
- 300 g Bread in bite-sized bits
- 150 g Lettuce cut into 2cm strips
- 2 cloves Garlic pressed
- 7 tbsp Olive oil
- 20 pcs Cherry tomatoes cut in half
- 1 pc Onion sliced
- 3 tbsp Red wine vinegar
- Sea salt & Pepper
Instructions
- Wash the salad and tomatoes and peel the garlic cloves and the onion Heat up the oven to 200°C
- Cut the cherry tomatoes in half, cut the bread in cubes (ca 2 cm). Add the bread in oven pan, press the garlic over the bread cubes an mix it. Pour 5 tbsp of olive oil over it and stir it. Add the tomatoes and stir. Put it in the middle of the oven for about 10 - 12 minutes
- Take it out of the oven when the bread is golden brown. Put it in a bowl
- Add the sliced onion, add 2 tbsp of olive oil and 3 tbsp of red wine vinegar and mix everything together. Flavour with sea salt and pepper
- Add the lettuce and mix it, add some Balsamic cream on top - it's ready to serve
