Bread Salad à la Freja

  • 300 g Bread in bite-sized bits
  • 150 g Lettuce cut into 2cm strips
  • 2 cloves Garlic pressed
  • 7 tbsp Olive oil
  • 20 pcs Cherry tomatoes cut in half
  • 1 pc Onion sliced
  • 3 tbsp Red wine vinegar
  • Sea salt & Pepper


  • Wash the salad and tomatoes and peel the garlic cloves and the onion Heat up the oven to 200°C
  • Cut the cherry tomatoes in half, cut the bread in cubes (ca 2 cm). Add the bread in oven pan, press the garlic over the bread cubes an mix it. Pour 5 tbsp of olive oil over it and stir it. Add the tomatoes and stir. Put it in the middle of the oven for about 10 - 12 minutes
  • Take it out of the oven when the bread is golden brown. Put it in a bowl
  • Add the sliced onion, add 2 tbsp of olive oil and 3 tbsp of red wine vinegar and mix everything together. Flavour with sea salt and pepper
  • Add the lettuce and mix it, add some Balsamic cream on top - it's ready to serve
