Potato Pizza

Potato Pizza

Ingredients
  

  • 600 g Potatoes grated
  • 1 pc Onion chopped
  • 4 tbsp Olive oil
  • 1 clove Garlic chopped
  • 4 pc Stalks of thyme
  • 80 g Vegan cheese grated
  • 2 pc Tomatoes sliced

Instructions
 

  • Peel potatoes and grate them, chop the onion, garlic and the thyme. Heat up the oven to 200°C
  • Mix the potatoes onion, garlic and the thyme with 4 tablespoons of oil. Season it with salt and pepper
  • Spread the potato mixture evenly on a baking dish.
  • Put the potato pizza on the 2nd rail from bottom in the oven for 30 minutes
  • Add the tomato slices, season it with salt and pepper. Add the grated "cheese". Put it back in the oven for 15 minutes
  • It tastes so good that you could eat much more.

Spätzli Pfanne

Ingredients
  

  • 500 g Spätzli Spätzli are a kind of soft egg noodle found in the cuisines of Switzerland. A vegan version is possible
  • 300 g Champignon sliced
  • 2 pc Shallots chopped
  • 1.5 dl Veggie bouillon
  • 2 cloves Garlic chopped
  • 8 pc Dried tomatoes sliced
  • 2.5 dl Soy Cream
  • 4 tbsp Rapeseed oil
  • 1 tbsp Thyme leafs

Instructions
 

  • Chop the shallots, garlic and slice the champion and the dried tomatoes so it's ready to use later
  • Heat up rapeseed oil in a pan and add the spätzli (we made a vegan version - recipe will follow)
  • Fry them until golden brown. When ready take them out of the pan
  • Add some more rapeseed oil and then the garlic, champion and shallots in the pan
  • Let everything fry for a while, steer now and then
  • Add the veggie bouillon and let it simmer on low temperature for 5 minutes
  • Add the soy cream, thyme leafs and the sliced tomatoes and let it cook together, steer now and then
  • Add the fried spätzli and mix it together, let it simmer for a few minutes
  • Voila, ready to serve

Ingredients
  

  • 2 pc Garlic pealed and squeezed
  • 2 tbsp Olive oil
  • 1 tbsp Red pepper powder
  • 0.5 liter Veggie bouillon
  • 1 tbsp Cumin
  • 2 tbsp Dry Sherry

Instructions
 

  • Peal the garlics
  • Smash hem with the flat-side of the knife (as the picture show)
  • Add the red pepper, cumin powder to the garlic
  • Heat up a pot and add the garlic cloves, red pepper and cumin powder
  • Mix it and let it fry together for some minutes
  • Add the dry sherry and steer, let it cook for a minute
  • Add the veggie bouillon
  • Let it boil down for 20 minutes
  • Easy and a fantastic starter for cold days, plus it keeps the vampires away - so far it worked 🙂

Tajine

Tajine

Ingredients
  

  • 6 pc Carrots cubes
  • 2 pc Zucchini cubes
  • 2 pc Aubergine cubes
  • 1 pc Red Pepper cubes
  • 250 g Pumpkin cubes
  • 2 pc Tomatoes quarters
  • 50 g Resins
  • 1 bunde Flat parsley leaves chopped
  • 2 tbsp Olive oil
  • 3 pc Onion sliced
  • 4 cloves Garlic sliced
  • 3 tbsp Tomato purée
  • 2 twig Thyme leafs
  • 100 g Chickpeas cocked
  • 1/2 tsp Ginger powder
  • 1/2 tsp Cumin powder
  • 1/4 tsp Cayenne pepper powder
  • 1 pinch Saffron powder
  • 1 tbsp Red Pepper powder
  • 1 pc Cinnamon stick
  • 8 dl Veggie bouillon mixed

Instructions
 

  • Cut the carrot, zucchetti, aubergine, red pepper in cubes and sliced the onion and garlic. chop the thyme leafs
  • Cut the pumpkin in a little bigger cubes than the rest of the vegetables
  • Prepare the veggie bouillon, chickpeas and cut the tomatoes in quarters
  • Heat up a pot and add the onion, garlic, cinnamon stick then add as well all the spice powders as red pepper, saffron, cayenne pepper, ginger and cumin. Mix everything together and let it cook together for a few minutes
  • Add the veggie bouillon, chickpeas, Tomato purée, salt and pepper and mix it together good
  • Add the thyme leafs and lower the temperature and let it small cook for 20 minutes
  • Add the cubed carrot, zucchetti, aubergine, red pepper and mix it. Put on a lid on the pot and let it cook together for 15 - 20 minutes. Steer now and then
  • Add the pumpkin cubes
  • Add the tomatoes and let it simmer under a lid for 20 - 25 minutes
  • Serve the Tajine together with Couscous or Rice

Notes

It's a perfect recipe to do when you have guests because you can prepare it even the day before and just heat it up before serving.
If you do so it tastes even better.

“Pump Choi”

  • 1 pc Pak Choi sliced in 6 pieces
  • 1 pc Peanut Pumpkin cut in 2 cm cubes
  • 1 pc Onion sliced
  • 1 clove Garlic sliced
  • 4 tbsp Olive oil
  • 2 dl Veggie bouillon
  • Sea salt & Pepper

Instructions
 

  • Cut and slice the vegetable
  • Heat up a pan and add the onion and the garlic and let it fry for a few minutes
  • Add the peanut pumpkin, steer everything together and let it fry on low heat for 8 - 10 minutes
  • Add the Pak Choi and the veggie bouillon, let it cock under a lid for 10 minutes
  • Ready to serve, and easy quick dish which taste wonderful

Ingredients
  

  • 1 kg Potatoes grated
  • 1 pc Onion chopped
  • 2 Cloves Garlic chopped
  • 50 g Butter
  • 3 pcs Tomatoes sliced
  • 150 g Grated cheese
  • Salt and pepper

Instructions
 

  • Peal the potatoes, chop the garlic and the onion
  • Grate the potatoes
  • Heat up a pan and melt the butter
  • Add the onion and the garlic and fry them for about 5 minutes
  • Add the grated potatoes and season it with salt and pepper
  • Lower the temp and steer the ingredients every 5 minutes and until the potatoes start to be soft (ca 40 minutes)
  • Form the potato cake as you can see on the picture, let it fry for about 5 minutes on this side
  • Grease a lid the size of the potato cake with butter
  • Cover the potato cake with the lid and turn the cake around and back in the pan
  • Add the sliced tomatoes on top of the cake
  • Add the grated cheese over the tomatoes
  • Put a lid over the potato cake
  • Let it cook for about 5 minutes or to the cheese have melted. It's ready to serve
