Red Thai - Curry with Shrimps

Ingredients
  

  • 300 g Vegan shrimps
  • 2.5 dl Cocos milk
  • 1.5 dl Soy milk
  • 1 pc Red Paprika chopped in cubes
  • 1 pc Onion chopped
  • 1 pc Sweet Potato chopped in cubes
  • 1 pc Broccoli (small) chopped in cubes
  • 3 cloves Garlic chopped
  • 150 g Green peas
  • 8 pcs Mini corn
  • 1 tbsp Rapeseed oil
  • 3 tbsp Red curry paste
  • Salt

Instructions
 

  • We use this brand of vegan shrimps which should be boiled in water for a few minutes before they are ready
  • Chop the paprika, sweet potato, onion, garlic and the broccoli
  • Heat up a pan with rapeseed oil. When hot add the shrimps and fry them for a few minutes
  • Add the chopped the paprika, sweet potato, onion, garlic and the broccoli. Mix it and let it fry for 5 minutes
  • Add the cocos milk, the soy milk and the red curry paste, let it simmer on low temperature for 10 minutes
  • A wonderful dish which is perfect to serve when you have guests.

Notes

Jasmin rice fits perfect to this dish.

Fried Pak Choi with Garlic Tofu

Fried Pak Choi with Garlic Tofu

Ingredients
  

  • 400 g Smoked tofu in ca 2 x 5 cm slices
  • 4 pcs Pak Choi not to big
  • 1 pc Onions chopped
  • 3 cloves Garlic sliced
  • 1 pc Chili chopped
  • 2 tbsp Rapeseed oil
  • 1 tbsp Balsamic vinegar
  • 2 splashes of Vegan Worcestershire sauce

Instructions
 

  • Chop the onion, garlic and the chili. Slice the pak choi in quarter on in the length.
  • Heat up a pan with sesame oil. When hot add the pak choi and let then fry for 5 minutes, add the onion. Add the tofu and mix everything and let it fry for some minutes. Just before it is ready add the garlic, balsamico vinegar and the Worcestershire sauce. Mix everything and it is ready to serve
  • Add chopped chili on top before serving
  • We served it with oven grilled potatoes. Sliced in half and add olive oil on the sliced site, add salt and some spices of your choice

Notes

This ia a quick and wonderful dish which surprised us a lot (did not believe it would be that good). Therefore, you'll find Pak Choi every now and then in our recipes....it's so yummy :o)

Ingredients
  

  • 300 g Macaroni in Switzerland they call it Hรถrnli
  • 300 g Minced veggie meat quorn or as in this recipe minced soy meat (Ghackets)
  • 1 pc Onion chopped
  • 4 dl Brown sauce
  • Salt, pepper, paprika powder and chili flakes
  • 2 dl Apple puree
  • 1 dl Red wine mixed with 5 dl water for the bouillon to cook the soy meat in

Instructions
 

  • Start with cooking the minced soy meat for 10 minutes in water mixed with little red wine. When ready drain and press out the water from the meat
  • Heat up a pan and add the chopped onion and fry it for a few minutes, Start heating up the water for the pasta at the same time
  • Add the minced meat with the onion, mix everything together and let it cook for a few minutes
  • Add the brown sauce mix. Stir everything together
  • Add salt, pepper, paprika powder and some chili flakes. Mix and let it simmer on low temperature until the pasta is ready
  • Ready to serve

Notes

 
Served normally in Switzerland together with apple puree but can as well be served with a salad.
A glas of Red wine fits good.

Ingredients
  

  • 200 g Risotto rice (arborio rice)
  • 1.5 dl White Wine
  • 1 pcs Onion chopped
  • 4 pcs Tomatoes sliced (or 3 - 4 tbsp of tomato pure)
  • 2 dl Parmasan cheese grated
  • 1 liter Veggie bouillon mixed
  • 5 tbsp Olive oil
  • Salt will normally not be needed if correct bouillon mix is done

Instructions
 

  • Slice the tomatoes and chop the onion. grate the parmasan cheese. Mix together the bouillon. Measure up the white wine in a cup. measure up the correct amount of rice
  • Heat up some olive oil in a pot and add the onion. after a few minutes lower the temperature and add the rice and fry it together for a few minutes.
  • Add in the white wine and let it simmer on low temperature for 3 - 4 minutes.
  • Add in little amount of the bouillon and let it simmer. Now it's the time to add the sliced tomatoes (or the tomato pure). Every time the when you see that the mix start to thicken add a little more bouillon. Just let it simmer slowly at a low temperature and steer now and then so you don't burn it.
  • When all the bouillon is used up or the rice is soft (it will take about 35 - 45 minutes), add the grated parmasan cheese and steer / mix it together

Wonderful dishย where a salad and a glas of good red wine fits perfect.

Freja’s Spinach & Olive Quiche

Freja's Spinach & Olive Quiche

Ingredients
  

  • 400 g Spinach
  • 180 g Black Olives without stone & cut in half
  • 3 pcs Onions chopped
  • 1 dl Soy Cream
  • 4 cloves Garlic chopped
  • 1 dl White Wine
  • 350 g Quiche Dough
  • 1 tbsp Veggie Egg Powder mixed with 30 ml water
  • 1 pc Tomato sliced
  • 100 g Vegan cheese sliced
  • Thyme fresh chopped or dry
  • Salt and pepper

Instructions
 

  • Peal & chop the onions, slice the tomato and the mozzarella cheese in 5 mm thick slices
  • Peal and chop the garlic, cut in half take out the stones from the olives, wash the spinach leaves
  • Heat up olive oil in a big pan, add the onion and the garlic, let it fry for a few minutes then add the white wine
  • Add the spinach and mix everything together, steer now and then
  • After a few minutes the spinach will shrink quite a lot
  • Add the black olives and fry it for 3-4 minutes
  • Prepare the dough during this time and put it in a pie dish, heat up the oven to 180ยฐC
  • Distribute the spinach & olive mix on top of the dough
  • Pour the soy cream and the veggie egg mix over the quiche, then add a few sliced tomatoes and veggie cheese
  • Insert the quiche in the middle of the oven for about 40 minutes
  • Ready to serve as a main dish with a green salad

Ingredients
  

  • 250 g Champignon sliced
  • 250 g Green peas
  • 250 g Soy meat or seitan in pieces
  • 1 pc Onion
  • 1 pc Chili or dried chili flakes
  • 2 cloves Garlic chopped
  • 3 tbsp Olive oil
  • 1 dl White Wine
  • Salt, pepper & Italian spice mix to season

Instructions
 

  • Chop/slice the champions, meat, onion, chili, garlic
  • Heat up the olive oil in a pan, add the onion and garlic. Fry it for a few minutes
  • Add in the champions and fry for a few minutes. Add the white wine and steer it for 3 minutes
  • Add the peas and the veggie meat, steer everything and let cook slowly under cover for 15 minutes, steer now and then

Notes

So easy it is.
Ready to serve with just a salad or if you would prefer, why not with some rice.
