Linguine with Lemon Sauce

Ingredients
  

  • 400 g Linguine flat type of spagetti
  • 2 dl Cream
  • 20 g Butter
  • 1 pcs Lemon organic
  • 2 dl White Wine
  • 1 dl Parmesan cheese
  • 2 tbsp Salt
  • Pepper

Instructions
 

  • Clean the lemon and grate its zest. Press the juice from half of the lemon, grate the parmasan cheese
  • Start the water for the Linguine (pasta)
  • Add ca 2 tbsp salt when the water boils
  • Add the Linguine, when al dente, take it of the stove and remove the water
  • Heat up a pan
  • Melt the butter
  • Add the grated lemon zest
  • Add the white wine
  • Let it simmer for a few minutes
  • Add the cream and season it with salt and pepper
  • Let the sauce simmer until it becomes thicker
  • Add the Linguine
  • Add the parmesan
  • Add the lemon juice
  • Mix everything good and serve at once

Notes

An easy quick meal which tastes as fantastic as it sounds! If you like some more parmesan you can of course grate some over it.
As so often, a good red wine and some bread fits perfect to this refreshing pasta dish!

Ramson-Ricotta Filled Seitan Steaks

Ramson-Ricotta Rilled Seitan Steaks

Ingredients
  

  • 20 g Ramson leaf cut in slices
  • 1 pcs Onion chopped
  • 100 g Ricotta
  • 1 pcs Lemon grate its zest and after press out the juice
  • 2 pcs Seitan steaks 180 g / piece
  • 2 tbsp Olive oil
  • 1 dl Cream
  • Salt
  • Pepper

Instructions
 

  • Cut the ramson leafs in fine slices, keep some as decoration for later
  • Chop the onion in small pieces
  • Grate the lemon zest
  • Press out the juice from the lemon
  • Add ramson, onion, ricotta and half of the grated lemon zest and mix it together, season with salt and pepper
  • Cut a pocket in the seitan steaks
  • Fill the seitan steaks with the ramson-ricotta mixture
  • Add the rest of the grated lemon zest over the filled seitan steaks, season with some salt and pepper
  • Heat up a pan and fry the filled seitan steaks carefully on both sides
  • When ready remove the filled steaks from the pan
  • Pour the lemon juice into the pan
  • Add the rest of the ramson-ricotta filling and the cream
  • Stir all ingredients to a creamy sauce, season it with salt and pepper, if necessary
  • Put a ricotta-ramson filled steak on a plate and pour some sauce on top, decorate with a few sliced ramson leaf

Notes

Serve it with fried potatoes or pasta - divine!

Spaghetti à la Freja

Spaghetti à la Freja

Ingredients
  

  • 200 g Spaghetti I use Barilla No. 7, 11 minutes
  • 20 pcs Cherry tomatoes cut in half
  • 1 pcs Onion cut in half and in slices
  • 2-3 clove Garlic cut in half and in slices
  • 1 pcs Chili cut in half and in slice, or use dry chili - it works as good
  • 1 l Water
  • Salt same quantity as cooking spaghetti the usual way
  • 1 bunch Basil

Instructions
 

  • Use a wide pan with a lid for cooking of this meal
  • Cut the cherry tomatos in half
  • Cut the onion, garlic and chili in half and cut them in fine slices
  • Add the spaghetti, onion, garlic, chili basil and the salt in the pan
  • Add the water
  • Heat up under lid until it's cooking
  • Reduce the heat and let it simmer for about 11 minutes (stir now and then)
  • The water will evaporate during cooking and will look like this picture in the end.

Notes

This is one of the easiest pasta meals you can imagine, without stress about finishing everything at the same time.
Serve it with grated parmesan cheese and some bread.
If you do for more than 2 people the amount of water can be a little tricky. For 4 servings I recommend about 1.5 litre of water.

Among other things a calculator is connected between the number of people which shall be served and the amount of each ingredient.

For example, if you choose 6 servings (persons) it will automatically recalculate the quantity of each ingredient you will need to prepare a meal for 6 people.

The time to prepare and cook the meals is estimated of course – depends on how fast one handles a knive for example and what kind of oven/grill/stove you have in your kitchen.
