  1. Clean and cut the haricots in half. Cut the zucchini in half and in 1 cm thick pieces.
  2. Add olive oils in a pan and heat it up.
  3. Add the haricots and fry for a minute or two.
  4. Add the zucchini, stir it together and fry them together for ca 15 minutes under lid. add a little salt.Mix the salad dressing when the haricots and zucchini are in frying in the pan.
  5. Add the lemon juice and the zest in a salads bowl
  6. Add the chili.
  7. Take the haricot and zucchini of the heat and add it to the salads bowl. Mix everything together.
  8. Add a salads leave on each plate. Add the haricot salads mix asa filling on each salads leave.
  9. Add the Cashew nuts.
  10. Add the red currant berries at the end.

  1. Clean the lemon and grate its zest. Press the juice from half of the lemon, grate the parmasan cheese
  2. Start the water for the Linguine (pasta)
  3. Add ca 2 tbsp salt when the water boils
  4. Add the Linguine, when al dente, take it of the stove and remove the water
  5. Heat up a pan
  6. Melt the butter
  7. Add the grated lemon zest
  8. Add the white wine
  9. Let it simmer for a few minutes
  10. Add the cream and season it with salt and pepper
  11. Let the sauce simmer until it becomes thicker
  12. Add the Linguine
  13. Add the parmesan
  14. Add the lemon juice
  15. Mix everything good and serve at once

An easy quick meal which tastes as fantastic as it sounds! If you like some more parmesan you can of course grate some over it.

As so often, a good red wine and some bread fits perfect to this refreshing pasta dish!

  1. Cut the ramson leafs in fine slices, keep some as decoration for later
  2. Chop the onion in small pieces
  3. Grate the lemon zest
  4. Press out the juice from the lemon
  5. Add ramson, onion, ricotta and half of the grated lemon zest and mix it together, season with salt and pepper
  6. Cut a pocket in the seitan steaks
  7. Fill the seitan steaks with the ramson-ricotta mixture
  8. Add the rest of the grated lemon zest over the filled seitan steaks, season with some salt and pepper
  9. Heat up a pan and fry the filled seitan steaks carefully on both sides
  10. When ready remove the filled steaks from the pan
  11. Pour the lemon juice into the pan
  12. Add the rest of the ramson-ricotta filling and the cream
  13. Stir all ingredients to a creamy sauce, season it with salt and pepper, if necessary
  14. Put a ricotta-ramson filled steak on a plate and pour some sauce on top, decorate with a few sliced ramson leaf

Serve it with fried potatoes or pasta - divine!
