  1. Chopp the onion, garlic and the chili
  2. Warm up the olive oil in a pan and fry the onion, garlic and the chili, stir for 2-3 minutes
  3. Add the soy meat and the red-wine and let it cook for 10 minutes
  4. Add the tomato purée, spices, pepper and salt
  5. Add tomatoes and let it let it simmer for about 45 minutes on low temperature. FATTO!

Serve this tasty “salsa” with spaghetti or penne of your choice, don’t forget the grated parmesan cheese and some bred – and a nice glass of red wine of course!

  1. Peal the potatoes, chop the garlic and the onion
  2. Grate the potatoes
  3. Heat up a pan and melt the butter
  4. Add the onion and the garlic and fry them for about 5 minutes
  5. Add the grated potatoes and season it with salt and pepper
  6. Lower the temp and steer the ingredients every 5 minutes and until the potatoes start to be soft (ca 40 minutes)
  7. Form the potato cake as you can see on the picture, let it fry for about 5 minutes on this side
  8. Grease a lid - the size of the potato cake - in with butter
  9. Cover the potato cake with the lid and turn the cake around and back in the pan
  10. Let it fry for another 5 minutes and it's ready to serve

  2. Heat up the oven to 200°C
  3. Mix the spinach, ricotta and parmesan and season with salt and pepper
  4. Butter in an ovenproof form
  5. Fill the spinach-ricotta mixture in all pasta pipes
  6. Put the spinach-ricotta filled pasta pipes in one layer in the dish
  7. Cover the spinach-ricotta filled pasta pipe with the tomato sauce
  8. Place the mozzarella cheese slices on top
  9. Put the form in the middle of the oven for about 20 minutes

A really wonderful main dish which can be prepared the day before.

On the day your guests are coming just fill the pasta pipes and add the tomato sauce and mozzarella on top, and in with the rich in the oven. A good sallad and some bread works fine to this dish!

  1. Clean the lemon and grate its zest. Press the juice from half of the lemon, grate the parmasan cheese
  2. Start the water for the Linguine (pasta)
  3. Add ca 2 tbsp salt when the water boils
  4. Add the Linguine, when al dente, take it of the stove and remove the water
  5. Heat up a pan
  6. Melt the butter
  7. Add the grated lemon zest
  8. Add the white wine
  9. Let it simmer for a few minutes
  10. Add the cream and season it with salt and pepper
  11. Let the sauce simmer until it becomes thicker
  12. Add the Linguine
  13. Add the parmesan
  14. Add the lemon juice
  15. Mix everything good and serve at once

An easy quick meal which tastes as fantastic as it sounds! If you like some more parmesan you can of course grate some over it.

As so often, a good red wine and some bread fits perfect to this refreshing pasta dish!

  1. Cut the ramson leafs in fine slices, keep some as decoration for later
  2. Chop the onion in small pieces
  3. Grate the lemon zest
  4. Press out the juice from the lemon
  5. Add ramson, onion, ricotta and half of the grated lemon zest and mix it together, season with salt and pepper
  6. Cut a pocket in the seitan steaks
  7. Fill the seitan steaks with the ramson-ricotta mixture
  8. Add the rest of the grated lemon zest over the filled seitan steaks, season with some salt and pepper
  9. Heat up a pan and fry the filled seitan steaks carefully on both sides
  10. When ready remove the filled steaks from the pan
  11. Pour the lemon juice into the pan
  12. Add the rest of the ramson-ricotta filling and the cream
  13. Stir all ingredients to a creamy sauce, season it with salt and pepper, if necessary
  14. Put a ricotta-ramson filled steak on a plate and pour some sauce on top, decorate with a few sliced ramson leaf
