Ramson-Ricotta Rilled Seitan Steaks
Ingredients
- 20 g Ramson leaf cut in slices
- 1 pcs Onion chopped
- 100 g Ricotta
- 1 pcs Lemon grate its zest and after press out the juice
- 2 pcs Seitan steaks 180 g / piece
- 2 tbsp Olive oil
- 1 dl Cream
- Salt
- Pepper
Instructions
- Cut the ramson leafs in fine slices, keep some as decoration for later
- Chop the onion in small pieces
- Grate the lemon zest
- Press out the juice from the lemon
- Add ramson, onion, ricotta and half of the grated lemon zest and mix it together, season with salt and pepper
- Cut a pocket in the seitan steaks
- Fill the seitan steaks with the ramson-ricotta mixture
- Add the rest of the grated lemon zest over the filled seitan steaks, season with some salt and pepper
- Heat up a pan and fry the filled seitan steaks carefully on both sides
- When ready remove the filled steaks from the pan
- Pour the lemon juice into the pan
- Add the rest of the ramson-ricotta filling and the cream
- Stir all ingredients to a creamy sauce, season it with salt and pepper, if necessary
- Put a ricotta-ramson filled steak on a plate and pour some sauce on top, decorate with a few sliced ramson leaf

Serve it with fried potatoes or pasta - divine!
