Ramson-Ricotta Rilled Seitan Steaks

  • 20 g Ramson leaf cut in slices
  • 1 pcs Onion chopped
  • 100 g Ricotta
  • 1 pcs Lemon grate its zest and after press out the juice
  • 2 pcs Seitan steaks 180 g / piece
  • 2 tbsp Olive oil
  • 1 dl Cream
  • Salt
  • Pepper


  • Cut the ramson leafs in fine slices, keep some as decoration for later
  • Chop the onion in small pieces
  • Grate the lemon zest
  • Press out the juice from the lemon
  • Add ramson, onion, ricotta and half of the grated lemon zest and mix it together, season with salt and pepper
  • Cut a pocket in the seitan steaks
  • Fill the seitan steaks with the ramson-ricotta mixture
  • Add the rest of the grated lemon zest over the filled seitan steaks, season with some salt and pepper
  • Heat up a pan and fry the filled seitan steaks carefully on both sides
  • When ready remove the filled steaks from the pan
  • Pour the lemon juice into the pan
  • Add the rest of the ramson-ricotta filling and the cream
  • Stir all ingredients to a creamy sauce, season it with salt and pepper, if necessary
  • Put a ricotta-ramson filled steak on a plate and pour some sauce on top, decorate with a few sliced ramson leaf


Serve it with fried potatoes or pasta - divine!
